Cicoria Catalogna or Italian Dandelion
Closely related with endive, trésfine and in the chicory family. One of the most versatile vegetables. You can use it in both a salad and as a baby leaf and stir fry it when bunched. It is valued by the nutritional treats and bitter note. Rich in vitamin A, C, K. Smaller amount of Vitamin E, folate, and Vitamin B1 but more in several minerals, iron, calcium, magnesium, and potassium.
The best way to stir fry it is with olive oil, garlic, salt, pepper, bit of lemon dash. Traditionally they are sprinkled with chili pepper flakes or powder before serving, but don't over power the seasoning because it already has great flavor!
