Sambucus nigra

The flowers are about 4 to 6 cm in size, with inflorescences ranging from 10 to 20 cm. The scent is sweet and floral, with a slight musky hint, citrus, and honey. The taste is mildly sweet with a light aromatic flavor, and it leaves a delicate floral aftertaste. These flowers are often used to make herbal drinks or syrups. The flower heads can also be lightly battered and fried to make elderflower fritters.
